Our Story
Nopal by Taco Block is the home of Taco Block — a family-owned business founded by husband and wife Brenda and Adrian Bonilla with a simple dream: to serve delicious, authentic Mexican food while creating memorable experiences for every guest.
Our journey began in 2006 with a food truck and a whole lot of heart. From there we planted roots in Denver's Athmar community, serving neighbors and building friendships one taco at a time. After years of growth we transitioned to full-service catering, proving that our tacos could stand on their own at any event, anywhere. Then came our biggest chapter yet — we purchased the old Club Corner building in Wheat Ridge, remodeled it from the ground up, and opened the doors to Nopal by Taco Block. A place we are proud to call home.
Why Nopal?
The name Nopal is inspired by one of our most beloved menu items — our vegetarian taco featuring the nopal cactus in place of meat. The nopal is a symbol of resilience, nourishment, and Mexican heritage. Just like the cactus, Taco Block has thrived through every season and every challenge.
A Family Business, Built With Love
Brenda and Adrian have always been at the heart of Taco Block. We are not only business partners, but life partners, and this business represents what two people can build together through faith, dedication, perseverance, and hard work.
Our two daughters have grown up alongside Taco Block, and our family has supported and worked beside us throughout this journey. Their love and encouragement have played an important part in helping us become who we are today.
One of our greatest hopes is that our daughters learn from our example—that when they set meaningful goals and pursue them with faith and determination, their dreams are within reach.
Above all, we give thanks to our Lord for our family, every opportunity, and every blessing along the way.

We fell in love with Wheat Ridge the moment we arrived. The city welcomed our remodel without hesitation, and the community showed up for us in ways that still move us deeply. Wheat Ridge is home to so many small family-owned businesses just like ours, and that spirit of community and entrepreneurship is something we cherish and feel proud to be part of.

For nearly two decades, Taco Block has had the privilege of serving well-known organizations and events throughout the region, including Amazon, Parker Adventist Hospital, and the National Western Stock Show.
While we are proud of those experiences, what means the most to us are the relationships we have built along the way. Local businesses, community organizations, HOAs, and families continue to welcome us back year after year for corporate lunches, annual gatherings, pool parties, and special celebrations.
From our partnership with Arapahoe Libraries to the families who have made Taco Block part of their traditions, every returning client reminds us that our work is about more than serving tacos. It is about bringing people together and creating experiences they look forward to sharing again.

We had the honor of being featured on PBS — a milestone that came about in the most Taco Block way possible. We catered for the PBS team and traded our tacos for their beautiful video. That exchange captures exactly who we are — a business that believes in community, generosity, and the power of supporting one another.
Giving Back
Giving back is not an afterthought for us — it is part of who we are. Every year we serve free meals to those experiencing homelessness in our community. We offer discounts and affordable taco packages to non-profit organizations and schools, and we proudly run fundraisers for schools to help them raise money for their programs. If we have been blessed, it is our responsibility to share those blessings with others.
